Digestive Biscuits

Ingredients

  • 1 3/4 cups flour
  • 1/2 cup rolled oats
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 100g butter
  • 1/4 cup caster sugar
  • 1/3 cup milk

Method

Preheat oven to 180 C.   Sift flour, salt and baking powder then mix in rolled oats. Rub in butter, stir in sugar, add enough milk until mixture turns into a fairly stiff dough. Roll out and cut into rounds. Prick with a fork and bake for 15 minutes until golden and firm.

  1. I would love to make these biscuits but I very badly broke my wrist in our earthquakes and find it too difficult to rub butter etc.
    Is it possible to melt the butter and add it this way?
    I look forward to your reply and maybe I can then make these biscuits

    • If you have a food processor you could possibly cut the butter in to the dried ingredients (perhaps minus the rolled oats), then add the rolled oats in with the liquids. Possibly suggest that instead of rolling the dough out and cutting the biscuits, you roll the dough into a sausage shape and cut into rounds from the chilled roll. (This works very well for gingernuts.)
