Easy Chicken and Mushroom Casserole

serves 4


  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 stalk celery, chopped
  • 2 cloves garlic, crushed
  • 500 g chicken, diced
  • 1/2 cup white wine (optional)
  • 400 g mushrooms, sliced
  • 400 g can cream of mushroom soup
  • 1/4 cup sour cream
  • 2 tablespoons chopped parsley



Heat oil in a saucepan. Add onion and celery and cook until soft. Add garlic and cook a further minute. Add chicken and cook another 5 – 10 minutes until chicken is cooked through. Add wine, if using, and mushrooms and cook for a further 5 minutes. Add soup and sour cream and season with salt and lots of freshly ground black pepper. Heat until almost boiling and then stir through parsley and serve. Serve with risoni, fettuccine or any other pasta.
