Ginger Kiss Cake

MorvenAre you a fan of ginger kisses? This cake tastes remarkably similar and better yet needs no icing except maybe a dusting of icing sugar.

Ingredients

  • 2 cups white sugar
  • 250 g butter, softened
  • 2 1/4 cups flour
  • 1 cup plain or vanilla flavoured yoghurt
  • 3 eggs
  • 1 teaspoon vanilla essence
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • 1 teaspoon groung ginger
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda

Method

Preheat oven to 175 C (350 F)Grease and flour one 22.5x 32.5 cm (9×13″) baking pan.
In a large bowl, beat the butter with the sugar until light and fluffy.
Beat in the flour, yoghurt, eggs, vanilla, cinnamon, allspice, nutmeg, cloves, ginger salt and baking soda.
Mix until combined then beat with hand held mixer at high speed for 2 minutes Pour the batter into the prepared pan and bake for 30 to 35 minutes or until a toothpick inserted near the centre comes out clean.
Cool cake in pan on a wire rack for 15 minutes, remove from pan and continue to cool.
Dust with icing sugar to serve.

  1. I made this cake last week and it is delicious. The cake is tender and soft. I used a thick Greek strawberry yoghurt as it needed using up and I iced the cake with a vanilla buttercream to make it more like a ginger kiss in each bite. This recipe has been added to my family favourites folder.
