Ingredients
- 1 orange, washed
- 1 cup sugar
- 1 egg
- 125g butter, softened
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 1 cup semi sweet chocolate chips
- 1/2 cup milk mixed with
- 1 teaspoon baking soda
Method
Preheat oven to 190 C.
Sift flour and baking powder into a bowl and add chocolate
chips. Chop whole orange and place in a food processor with sugar, process
until orange is finely chopped and then add egg and butter. Process until
well combined. Add orange mix to the flour along with the milk and baking
soda, mix lightly to combine. Spoon batter into muffin tins and bake for
15 minutes or until springy on top.
Could you bake this recipe as a cake rather than muffins – ie pour mixture into a cake tin and cook?
Very easy cupcake/muffin. I used dark chocolate melts giving them a definite jaffa flavour. I used cupcake cases and made 12 regular sized cakes, and had some extra mixture to make 5 mini cupcakes (with no cases). Due to the large amount of chocolate and butter these are more of a cake than a muffin; I would serve for afternoon tea.
