This one is always requested for family do’s (Christmas etc) and if someone is absent, we always have to deliver leftovers. Any leftovers fry up nicely in a non stick pan for breakfast. We usually make the day before to the topping stage then refrigerate and bake when we need it. Would also reheat nicely if made completely in advance.
Ingredients
- 6 large potatoes
- 50 g butter
- 1/4 cup milk
- 1/2 cup sour cream
- salt & pepper
- Topping:
- 50g butter
- 1/2 cup dry breadcrumbs
Method
Preheat oven to 180 C
Peel and chop potatoes.
Boil in salted water until cooked.
Drain well. Add butter and milk
Mash until smooth
Beat in sour cream, salt and pepper (just beat with a wooden spoon, not an electric one)
Spread into a casserole dish. Melt the butter and stir in breadcrumbs, sprinkle over potatoes.
Bake 35-40 minutes until golden.
