I transferred this recipe from my hand written cookbook, it was an old favourite of mine
Ingredients
- 1 cooked chicken
- 3-4 large potatoes, peeled and halved
- 30g butter
- 1 small onion, chopped
- 1 clove garlic, crushed
- 2 tablespoons flour
- 1/3 cup chicken stock
- 1/3 cup white wine
- 1/2 cup milk
- 2 teaspoons seeded mustard
- 1 tablespoon mayonnaise
- 1/2 cup grated cheese
Method
Preheat oven to 200 C. Remove meat from chicken and chop into pieces. Lightly cook potatoes and then slice into rounds. Line the bottom of a baking dish with potatoes and then cover with chicken. Melt butter in a small saucepan and saute onion and garlic until onion is tender. Stir in flour and then water, wine and milk. Bring to the boil, stirring and cook for 2 minutes. Remove from heat and stir in mustard and mayonnaise. Pour over chicken and sprinkle with grated cheese. Bake for 25-30 minutes until golden and bubbling.
