Ingredients
- 1 kg dried fruit
- 1/2 cup dark rum
- 250 g butter
- 250 g brown sugar
- 4 eggs
- 2 tablespoons treacle
- 1/2 teaspoon lemon essence
- 1/2 teaspoon almond essence
- 300 g flour
- 1/2 teaspoon cloves
- 1/2 teaspoon ground nutmeg
- 1/4 cup milk, warmed
- 1/2 teaspoon baking soda
- 1 tablespoon brandy
Method
Mix fruit with rum and microwaveon hight for 4 minutes, stirring twice during cooking time.
Beat butter and sugar until pale and creamy. Add eggs one at a time, beating well after each addition. Mix in treacle, essences, flour, spices and baking soda dissolved in milk.
Pour batter into a large microwave ring mould cake pan and sit in an elevated position in the microwave.
Cook on low power for 60 – 80 minutes until a skewer inserted into the cake comes out clean. Test after 50 minutes as different wattages cook at different levels.
Pour over brandy while hot and cool in pan.
