Orange Cakes

These moist little orange cakes are lovely served with a dollop of Greek yoghurt.
Dark chocolate chips can be a mixed through or alternatively you can ice with dark chocolate icing.




Yield: Makes 12


  • 1 orange, roughly chopped (skin on)
  • 1 cup sugar
  • 125g butter, softened
  • 2 eggs
  • 1 1/2 cups plain flour
  • 2 teaspoons baking powder
  • 1/2 cup milk


Preheat the oven to 180 C (350 F). Grease a 12 cup muffin tray or line a ring cake tin.
Place the orange and sugar in the bowl of a food processor and blend until finely chopped.
Add the softened  butter and eggs and mix well.
Sift flour and baking powder, add with milk and pulse to combine.
Spoon into muffin tray or cake ring tin.
Bake for 20 minutes until cakes feel springy or 45 minutes for a whole cake.
Serve dusted with icing sugar.

  1. Yum, I have made this recipe twice, works well in muffin tins too (just bake for about 15mins). Modification 1: mix together some melted butter, finely grated dark chocolate, teaspoon cocoa, and four Tbls icing sugar for delicious icing. Modification 2: add orange zest and finely chopped dark chocolate to the recipe; makes lovely flavour. Thanks
