Panettone With Mascarpone And Strawberries

Ingredients

  • 1 panettone (850g – 1kg)
  • 500g mascarpone
  • finely grated zest of 1 lemon
  • 3 tubs strawberries
  • icing sugar
  • cointreau

Method

Hull
and halve strawberries and sprinkle with icing sugar and cointreau. Leave
to sit for at least 30 minutes. Slice panettone into 4 slices horizontally.
Lightly mix mascarpone with lemon zest. Spread bottom slice of panettone
with mascarpone and top with 1/3 of the drained strawberries. Re assemble
the panettone this way and dust the top with icing sugar.
