Regal Marlborough Salmon and Rice Noodle Salad

Serves 4


  • 200g rice noodles
  • 1 carrot, cut into thin strips
  • 1 Lebanese cucumber, cut into thin strips
  • 1/2 cup fresh coriander leaves
  • 1.4 cup fresh mint leaves
  • 300g Regal Gourmet Bites, Chilli & Lime flavour
  • 1/2 cup roasted, unsalted peanuts
  • Dressing:
  • 1 tablespoon lime juice
  • 2 teaspoons brown sugar
  • 1 teaspoon fish sauce
  • 1 teaspoon finely chopped red chilli
  • or 1/2 teaspoon
  • minced red chilli
  • 2 teaspoons finely chopped lemon grass


Combine dressing ingredients and set aside.
Cook the rice noodles in boiling water for 4 to 5
minutes or until tender, drain and rinse under
cold water. Place into a large bowl and add carrot,
cucumber, coriander and mint.
Pour dressing over the noodle mixture, add salmon
and gently toss.
Serve garnished with peanuts.
