- 250g butter, at room temperature
- 1 1/2 cups sugar
- 1 teaspoon vanilla extract
- 4 eggs
- 220g dark chocolate, melted
- 3/4 cup[ flour
- 1 teaspoon baking powder
- 70g ground almonds
- 2 tablespoons cocoa
- 3/4 cup salted caramel (see recipe link below)
- vanilla ice cream
Preheat the oven to 160 C.
Beat butter and sugar until pale and creamy. Add vanilla and then eggs, one at a time, beating well after each addition.
Mix in the combined flour, baking powder, cocoa and then ground almonds. Pour in the melted chocolate and mix until smooth.
Pour mixture into a lined 31 x 25cm slice pan. Dot the surface with teaspoon fuls of salted caramel and gently mix with a skewer so that the caramel is slightly swirled into the mixture.
Bake for 40 minutes or until brownie is firm and top starting to crack.
Allow to cool until warm and then cut into pieces and serve with vanilla ice cream and extra salted caramel!
