Sausage and Corn Creole

  • 500 g sausages
  • 1 large onion, chopped
  • 1 green or red pepper, chopped
  • 1 tablespoon flour
  • 420 g can chopped tomatoes
  • 420 g can cream style sweet corn
  • gind of black pepper
  • pinch of dried thyme
  • 1 bayleaf
  • 1 teaspoons sugar or to taste


Cut sausages into small pieces and fry until brown. Add onion and pepper and continue cooking until sausage is cooked. Blend in flour, then slowly add tomatoes and the sweetcorn and cook until thickened. Lastly add the seasonings and simmer for about 15 mins.

Serve on hot rice or mashed potatoes.
