- 150 g butter
- 2 cups flour
- 1 teaspoons baking soda
- 1/2 cup chopped walnuts
- 1 cup of cooked peaches- drained and mashed.(reserve 1/4 cup of juice)
- 1 cup sugar
- 1 egg, lightly whisked
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon each of ginger, ground cloves, and cinnamon
- 1/2 teaspoon nutmeg
Beat butter, sugar and salt together, beat in egg and peach juice.
Stir soda and spice into mashed peaches, add this to mixture. Blend in mixed dry ingredients, lastly add nuts and mix well.
Pour into greased pan , sprinkle with 1 tablespoon sugar and 1 tablespoon cinnamon, bake 45 minutes in moderate oven.
This is lovely with cream, or can be served with custard for dessert.
