Turkish Shepherd’s Salad

Ingredients

  • 500g tomatoes, diced
  • 1 telegraph cucumber,diced
  • 1 green capsicum, diced
  • 1 red onion, sliced
  • 1/4 cup (loosely packed) coarsely chopped flat-leaf parsley
  • 1/2 cup chopped walnuts
  • 1 tablespoon chopped dill
  • 2 tablespoons chopped mint
  • 1 teaspoon sumac (optional)
  • salt to taste
  • 1/2 cup crumbled feta
  • 1/4 cup fresh lemon juice
  • 1/4 cup extra virgin olive oil

Method

Combine the vegetables, walnuts, herbs and spice together in a large bowl or platter.

Sprinkle with salt and drizzle with combined lemon juice and olive oil.
