Summer Slaw

Fresh and fabulous, the perfect coleslaw for summer.

  • 1/4 small green cabbage, shredded
  • 1/4 small red cabbage, shredded
  • 1 red onion, diced
  • 1 red capsicum, finely chopped
  • 3 radishes, finely sliced
  • 1/4 cup roughly chopped coriander leaves
  • 1/4 cup pumpkin seeds, lightly toasted
  • 1/4 cup apple cider vinegar
  • 1/4 cup olive oil
  • 2 teaspoons honey
  • 2 teaspoons wholegrain mustard
  • salt and freshly ground black pepper


Combine the cabbages, onion, capsicum, radish, coriander and pumpkin seeds in a large bowl.

Whisk the vinegar, oil, honey and mustard together in a small bowl.  Season with salt and pepper.
Drizzle the dressing over the slaw and toss to combine.
