A simple summer salad dressing that uses sun-ripened tomatoes to replace the oil usually found in mayonnaise.
- 2 Roma tomatoes
- 3 cloves garlic
- 2 tablespoons extra virgin olive oil
- 2 tablespoon water
- 2 tablespoons balsamic vinegar
- 10 large basil leaves
- 1/4 teaspoon salt
- 1 tablespoon grated parmesan cheese
- freshly ground black pepper
- Pinch of cayenne
Blend until smooth in a food processor or blender.
