Kit Kats and Pebbles – Emma Colling

Choc-Cake

Emma says “I made this for my flatmate’s birthday – he loved it.”

Mummy Darling’s Chocolate Cake

2 cups sugar
2 eggs
1 cup sour milk or plain yoghurt
¾ cup cocoa
200g soft butter
2 teaspoons baking soda
1½ teaspoons vanilla
¼ teaspoon salt
3 cups self-raising flour
1 cup boiling strong coffee

Put all ingredintss into food processor or cake mixer bowl in order given.
Process or beat for 1 minute.
Turn into a greased, lined 23 x 33 cm tin (expanding tin, fully
expanded).
Bake at 160°C for 1 hour, or until skewer comes out cleanly.

Butter Cream Icing
340g icing sugar (replace with some cocoa for chocolate icing)
85g butter
1 to 2 Tablespoons milk
1 teaspoon vanilla

Directions:

Combine all ingredients together and mix well.
kit kats and pebbles for decorating.
