Broccoli and Ham Frittata

  • 500 g broccoli
  • olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 3/4 cup diced ham
  • 3/4 cup cooked spiral pasta
  • 6 eggs whisked
  • freshly grated parmesan cheese


Separate broccoli florets from stem and wash well. Cook in boiling water for 3 minutes, drain.
Heat oil in a frying pan and saute onion for 2 minutes, add garlic and cookfor another minute. Add broccoli, ham and pasta and toss for a minute.
Tip into a bowl with the eggs. Wipe out frying pan and place over a high heat with a little oil. When hot tip mixture into the pan and cook for 1 minute.
Lower heat and cook until bottom is golden and crusty and top is moist but not runny. Sprinkle with parmesan cheese and place under hot grill to brown the top.
Serve warm or at room temperature with salad and crusty bread.
