Ingredients
- Puff pastry to line a 23cm pie dish
- Filling
- 1 beaten egg
- 1 cup mashed potato
- 1 small onion finely chopped
- 1 tablespoon chopped parsley
- 1/2 cup grated cheese
- , 1 grated apple (optional)
- , 1 teaspoon chopped mint
Method
Preheat oven to 200 C
Line a 23cm pie dish with pastry.
Put all remaining ingredients in a bowl and mix well. Pile mixture on top of pastry. Bake for 20 minutes and then reduce temperature to 170 C and cook a further 15 minutes. Serve hot or cold.
