- 125g butter
- 1/3 cup icing sugar
- 1/2 cup high grade flour
- 1/2 cup cornflour
- 1/2 teaspoon baking powder
- 1/2 teaspoon vanilla essence
- 1/2 teaspoon almond essence
- 1/4 teaspoon salt
- toasted flaked almonds to decorate
Line a 23cm microwave pie plate with baking paper.
Beat together butter and icing sugar until blended, slowly add flour, cornflour,
baking powder, essences and salt. Pat into plate, mark into 8 wedges and
prick with a fork. Sprinkle over almonds.
Elevate in microwave and cook on medium for 7-8 minutes until puffed and
set. Cool for 5 minutes and then cut.
