Microwave Shortbread

This shortbread is so quick and easy to make.  Ideal when you need a sweet treat fast or when a microwave is all you have.
Take care not to let the shortbread burn, it will very quickly go brown in the centre if over cooked.  In my microwave it is cooked in 7 minutes on 50% power.

 

 

 

Yield: makes 8 large wedges

Ingredients

  • 125g butter
  • 1/3 cup icing sugar
  • 1/2 cup cornflour
  • 1/2 cup plain flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla essence
  • 1/2 teaspoon almond essence
  • 1/4 teaspoon salt
  • toasted flaked almonds to decorate

Method

Grease a 22cm microwave safe pie plate with butter or line it with baking paper.
Beat together butter and icing sugar until light and fluffy, gently mix in the combined flour, cornflour, baking powder, essences and salt.
Pat the dough  into the pie plate plate, mark into 8 wedges and
prick with a fork. Sprinkle over the almonds.
Elevate the plate in the microwave (I sit it on an upside down ramekin) and cook on medium for 7-8 minutes until puffed and
set. Cool for 5 minutes and then cut.

  1. Hi HELEN, is your microwave 1000 watt? I am trying to work out 50% power on a 1000 watt microwave that has powers of 100%,80%, 60%, to try out the shortbread recipe
