Microwave Shortbread

This recipe was provided by one of our readers/listeners on Radio Live Home & Garden Show.  It hasn’t been tested by us, as yet.


  • 125g butter
  • 1/3 cup icing sugar
  • 1/2 cup high grade flour
  • 1/2 cup cornflour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla essence
  • 1/2 teaspoon almond essence
  • 1/4 teaspoon salt
  • toasted flaked almonds to decorate



Line a 23cm microwave pie plate with baking paper.
Beat together butter and icing sugar until blended, slowly add flour, cornflour,
baking powder, essences and salt. Pat into plate, mark into 8 wedges and
prick with a fork. Sprinkle over almonds.
Elevate in microwave and cook on medium for 7-8 minutes until puffed and
set. Cool for 5 minutes and then cut.

  1. Unfortunately I have to agree with the one other comment here. I’m not sure what the point of putting up a recipe on your food blog that you haven’t even tested yourself is? Comes across as unprofessional.

    • Hi Sarah, foodlovers is a very old site, about 22 years I think. Over the years of my radio work I collected in community recipes. Not in recent years but many recipes still linger.
      I am looking critically at recipes and deleting those that don’t fit with what we are. There are lots of community recipes that will stay, much as a community cookbook has.
      In no way. was it meant to be click bait.
