Ingredients
- 12 passionfruit
- 100gms butter cut into cubes
- 2 beaten eggs
- 3/4 cup caster sugar
Method
Put the pulp of passionfruit into microwave proof bowl.
Add remaining ingredients.
Cook for 1 minute on 100% power. Whisk well, then
cook in bursts of about 40 seconds, whisking in between
until thick & creamy. Should take about 5 minutes.
Cool & store, covered in the fridge.
Yummy topping for pavlovas, muffins etc.
Makes about 2 cups.

Yesterday I tried the microwave passionfruit butter recipe. Wonderful!
Economic (only 2 eggs), easy and fast (5 minutes cooking)!
The next time, I shall exchange sugar for an artificial sweetener as my husband needs to be careful with sugar intake. I hope it also comes out perfect. Anyway, it is now hoarded in the fridge for a few weeks and I shall be sharing it with some other family members.
