Passionfruit Curd

Ingredients

  • 1/2 cup sugar
  • 60g butter
  • 2 eggs, well beaten
  • pulp of 7 passionfruit

Method

Place sugar and butter in a small saucepan over a medium heat and stir until butter is melted and sugar dissolved. Add egg and passionfruit pulp and stir continuously over a lower heat until mixture thickens. Pour into a hot sterilised jar and keep in the refrigerator for up to 2 weeks.
