Banana Loaf Cake

  • 125 g butter
  • 1/2 cup caster sugar
  • 2 eggs
  • 1 teaspoon vanilla esseence
  • 3 meduim ripe bananas
  • 50 g walnut pieces
  • 1 1/2 cups of self raising flour
  • 1 teaspoon bicarbonate soda
  • pinch of salt
  • 1 tablespoon milk



Preheat oven to 160 C
Beat butter and sugar until light and creamy. Add eggs one at a time, beating well after each addition, beat in vanilla. Mash peeled bananas to pulp. Stir into creamed mixture with chopped walnuts, combine well. Fold in sifted dry ingerdients alternately with the milk. Spoon mixture into a greased and paper lined 23cm x 12cm loaf pan. Bake for 45-50 minutes.
I ice it with chocolate icing.
