Blighs Cheese Biscuits (with rice bubbles)

Bligh Stevenson from Hokitika was known for these delicious biscuits.


  • 125 g butter
  • 1 cup grated tasty cheese
  • 1 cup flour
  • pinch salt
  • 1 cup rice bubbles (puffed rice)


Preheat oven to 180 C.
Melt the butter and combine the remaining ingredients in a bowl. Add the butter to the bowl and mix well. Place small balls on a cold tray and bake for 15-20 mintues until golden and firm.

  1. I have made Bly’s biscuits ever since I heard her tell the recipe on the radio. I make them for Christmas gifts every Christmas. I won’t make them if I can’t give most of them away as I just sit and eat and eat until they’re all gone. They are moreish!!!
