Cranberry Cassata Ice cream

  • 2 litres vanilla ice cream
  • ½ cup Ocean Spray® Craisins®, sweetened dried cranberries
  • ½ cup flaked almonds, lightly toasted
  • ½ cup shredded coconut, lightly toasted
  • ¼ cup dried pineapple, finely chopped
  • ½ cup chocolate chips


Slightly soften ice cream and stir through Craisins®, almonds, coconut, pineapple and chocolate. Pour into a plastic lined tray or bowl and freeze until firm.
Remove from freezer 10 minutes before serving and cut into wedges or shape with a large spoon.
