Crostini With Goats Cheese And Oven Roasted Tomatoes

  • 500g Roma vine ripened tomatoes
  • ½ baguette
  • extra virgin olive oil
  • 100g goats cheese
  • salt and freshly ground black pepper
  • caster sugar


the tomatoes into thick rounds and place on a baking rack. Sprinkle with
salt and freshly ground black pepper and a little caster sugar. Place in
preheated 50 C oven and bake for approximately 3 hours, allow to cool. Cut
the bread into rounds and place in a single layer on an oven tray. Bake
at 180 C until golden and crisp. Remove from oven and brush with olive oil,
allow to cool. Spread the crostini with goats cheese and top with tomatoes.
