Ingredients
2 cups dates, chopped
1/2 cup water
2 teaspoons grated lemon rind
1/2 cup brown sugar
2 1/2 cups self raising flour
50g butter
1 tablespoon sugar
3/4 cup milk
1/2 cup water
1/4 cup raw sugar
Method
Place dates, water, and lemon rind and brown sugar in a small saucepan and heat stirring until almost boiling. The mixture will form a paste.
Remove from the heat and allow dates to cool.
Preheat oven to 220 C. Sift flour into a bowl and grate in butter, rub until mixture forms rough crumbs. Add white sugar and stir to mix.
Make a well in the centre and pour in milk and water, mixing quickly to a soft dough with a knife.
Tip dough out onto lightly floured surface. Roll into a rectangle and cut in half. Spread one half with date mixture and top with remaining half. Cut into 9 scones and sprinkle with raw sugar.
Bake for 12-15 minutes until golden.
Hello. In your date filled scone recipe there are 3 lots of sugar. Could you please clarify which sugar type & quanity goes where & when?
