  • 6 pieces citrus fruit – grapefruit, lemons, oranges
  • 12 cups water
  • 12 cups sugar


Wash and scrub fruit and boil whole in the water for 10 minutes. Remove from the heat, cool and then refrigerate overnight. Mash the fruit and then add the sugar, bring to the boil and cook until setting stage – 30 – 45 minutes. Blitz with a stick whizz. Pour into sterlised jars and seal.

  1. I have an even easier recipe but it is to enhance marmalade rather than make from scratch. Buy a jar of cheap marmalade; finely peel and orange and cut peel into thin strips. Simmer strips in 2 tbs orange juice until soft, then add the marmalade and simmer for 6-10 mins before pouring back into the jar. The results are just like home-made.
