Lemon Blueberry Loaf

  • 125g butter, softened
  • 1 cup caster sugar
  • 2 eggs
  • finely grated zest and juice of 1 lemon
  • 1/2 cup natural yoghurt
  • 1 1/2 cups self raising flour
  • 3/4 cup blueberries (fresh or frozen)


Preheat oven to 180 C. Beat butter and sugar until pale and creamy.  Add eggs, one at a time, beating after each addition.   Add the lemon juice and finely grated zest and stir in flour, yoghurt and blueberries.
Pour into a lined loaf pan and smooth the top.
Bake for 45-50 minutes or until a skewer inserted comes out clean

  1. I’ve made this loaf 3 times now and it’s just perfect. Quick and easy, super tasty and stays fresh for days. I did add some extra blueberries.
