- 125g butter, softened
- 1 cup caster sugar
- 2 eggs
- finely grated zest and juice of 1 lemon
- 1/2 cup natural yoghurt
- 1 1/2 cups self raising flour
- 3/4 cup blueberries (fresh or frozen)
Preheat oven to 180 C. Beat butter and sugar until pale and creamy. Add eggs, one at a time, beating after each addition. Add the lemon juice and finely grated zest and stir in flour, yoghurt and blueberries.
Pour into a lined loaf pan and smooth the top.
Bake for 45-50 minutes or until a skewer inserted comes out clean
