This salad is gorgeous in taste and looks. It is delicious served with barbecued lamb.I prefer to make it just prior to serving so that the water melon retains its fresh appeal.
Ingredients
- 1/2 small watermelon, cut into 2-3 cm cubes
- 100 g feta, crumbled
- ½ red onion, finely sliced
- ½ cup kalamata olives
- 1/4 cup each: chopped fresh mint leaves, basil leaves
- 1/3 cup extra virgin olive oil
- 2 tablespoons balsamic vinegar
Method
Arrange watermelon, feta, onion, olives, mint and basil on a serving platter. Combine olive oil and balsamic vinegar and drizzle over salad, finish with a grind of black pepper
I have a recipe for same salad I got in Fiji but it also has finely chopped chilli in it…YUM!!!
