6-10 as a dessert


  • 2 quinces, peeled and sliced
  • 375 ml sweet wine
  • 150g sugar
  • 1 cinnamon quill


Place the quince slices in a baking dish, add the sweet wine and sprinkle with sugar. Add the cinnamon. Cover with foil and bake very slowly at around 100 C for 3 hours. The quinces should be a rich rosie colour and tender in texture. Cool before serving.
