Spinach Quesadilla

Ingredients

  • 2 tbsp olive oil
  • 1 onion, finely copped
  • 2 cloves garlic, finely chopped
  • 1 tsp grated ginger
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ½ tsp turmeric
  • ½ tsp garam masala
  • 2 tomatoes, finely chopped
  • 4 cups (1 bag) chopped spinach
  • 1 pack Bazaar Traditional Roti
  • 250g cottage cheese

Method

1. Heat oil in a frying pan and gently cook onion, garlic and spices until soft.

2. Add tomatoes to the pan and cook for 1 minute, add spinach and cook gently until just cooked.

3. Place 2 roti on a board and cover each with ¼ of the spinach mixture.  Spoon over ¼ of the cottage cheese.  Cover each with another roti and cover that with the remaining spinach and cottage cheese.  Top with the remaining roti.

Heat a flat sandwich press and cook each roti stack, gently pressing it together.

Chop into wedges and serve.
