Makes 6 to 8 dozen mints
- 250 g cream cheese
- 1 tablespoon butter, softened
- 3 cups icing sugar
- 2 drops peppermint essence
- 1 drop red food coloring or green (optional)
In a large bowl, combine cream cheese, butter or margarine, and icing sugar. Mix in peppermint essence, adding additional drops to taste. Colour with food coloring paste if desired.
Roll mixture into small balls,( you may need more icing suger if too runny) and place on waxed paper. Flatten with a fork dipped in icing sugar. Let dry for about 2 hours on waxed paper, and then freeze or refrigerate.
