Black Forest Hedgehog Slice

The addition of black forest chocolate turns this from a simple hedgehog slice into something much more glamourous!

My friend Vic Brown is famous for her version, she gifts it to everyone and it is fondly known as Vickie slice.

*Recipe has been amended in the realisation that Cadbury’s Black Forest chocolate weighs 180g not 200g.

Yield: makes 20 squares.

Ingredients

  • 1 1/2 packetes (375g/13.22oz) packet plain sweet biscuits
  • 125g (4.4oz) butter
  • 1/4 cup cocoa
  • 180g Black Forest chocolate, roughly chopped
  • 200g (7 oz) sweetened condensed milk
  • 200g (7oz) milk chocolate, melted

Method

Line a 26 x 18cm slice tin with paper.
Crush the biscuits to small pieces either with a rolling pin in a sealed plastic bag or carefully in a food processor.
Place the biscuit pieces in a mixing bowl.
Melt the butter along with the cocoa in a small saucepan over a gentle heat, whisk to remove any cocoa lumps.  Once melted remove the pan from the heat and add the chocolate.  Set aside for 5 minutes before gently stirring until smooth and then mix in the sweetened condensed milk.
Press the mixture into the tin and then refrigerate for at least 30 minutes.
Gently melt the milk chocolate in a bowl over a pan of simmering water or in the microwave on reduced heat.   Spread the chocolate over the slice.  Allow to set at room temperature before cutting into pieces.  Store in an airtight container in the fridge.
