Brandied Figs

Ingredients

  • 1 cup sugar
  • 1 1/2 cups water
  • juice of 1/2 lemon
  • 1 vanilla bean, split
  • 18 ripe figs
  • 1/2 cup brandy

 

Method

Place sugar, water, lemon and vanilla bean in a saucepan and heat gently to dissolve
sugar. Add figs and simmer for 5 minutes covered, until figs are tender.
Allow to cool and then add brandy.
