Cathy's Asian Grilled Chicken

  • 4 chicken breasts, skinned and boned
  • 1/2 cup Thai sweet chilli sauce
  • 1/4 cup coconut cream
  • 1/2 teaspoon finely chopped fresh ginger
  • 2 tablespoons lime or lemon juice
  • 1 tablespoon chopped coriander
  • 2 tablespoons chopped peanuts
  • 2 teaspoon soy sauce


the chicken in a glass bowl add all other ingredients and stir to combine.
Leave to sit for a few hours.
Grill or barbeque chicken and serve with udon noodles, sprouts, coriander
and thin strips of red pepper.
