Chicken Liver Pate

  • 2 rashers bacon
  • 1 onion
  • 2 cloves garlic
  • 700g chicken livers
  • 125g butter
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon mace and cloves
  • 1 cup white wine
  • 1/2 cup brandy
  • 1/2 cup sour cream
  • Salt
  • 3 tbsp chopped parsley







1. Remove rind and chop bacon ,peel onion and chop roughly,crush garlic peel and chop.
2. Trim livers cut in half.Melt butter in a pan add bacon, onion,garlic and livers cook 1-2 minutes .
3. Add mustard, mace , cloves and wine ,simmer uncovered 20 mins or until livers are cooked.
4.Cool .Tip mixture into a food processor with brandy,sour cream, salt and parsley. Process until smooth.Tip into a serving dish , cover and refrigerate until ready to serve.
