Ingredients
- 3 slices wholegrain toast slice bread
- 3 single chicken breast fillets, skinned and chopped
- 1 medium onion, finely chopped
- 2 cloves garlic
- 2 eggs
- salt to taste
- 1 1/2 cups cornflakes, crushed
- 1 cup grated parmesan cheese
- 2 tablespoons chopped parsley
- oil for frying
Method
Place bread slices in a food processor and process until fine crumbs. Add the chicken, onion, garlic, 1 egg and salt and process until well combined.
Form chicken mixture into walnut sized balls.
Lightly whisk remaining egg, dip balls in egg and then and roll in combined cornflakes, parmesan cheese and parsley until evenly coated.
Heat oil approximately 2 cm deep in a large frying pan and when hot fry chicken until golden and cooked through. Drain on paper towels and then serve with your favourite dipping sauce.

These taste so much better when you grate some ginger & add some oyster sauce – then have dipped in sweet shilli sauce – just a treat. otherwise rather bland for my & my husband’s taste
