Fruit Cake with no refined sugar

  • 500g mixed fruit (sultanas are nicer)
  • 1 cup apricot nectar
  • 1 cup mashed pumpkin
  • 1 teaspoon honey
  • 1 ½ cups self raising flour
  • 1 teaspoon mixed spice
  • 1 teaspoon baking soda


Combine fruit nectar and honey, bring to boil and simmer for three minutes. Cool.
Preheat oven to 180 C. Stir in pumpkin, spice flour and soda. Bake in loaf
tin (14 x 21) for 1 hour. Cover with foil to cool. Decorate if you wish
as a cake or use as a buttered loaf.
