Overnight Christmas Cake

  • 300g butter
  • 300g sugar
  • 6 eggs, separated
  • 1 teaspoon lemon essence
  • 1 teaspoon brandy essence
  • 1 teaspoon rum essence
  • 60g cherries
  • 60g walnuts or almonds
  • 720g mixed dried fruit
  • 1 teaspoon mixed spice
  • 360g flour
  • ¼ teaspoon baking soda
  • 1 cup milk


butter and sugar, add egg yolks one at a time and beat well. Add essences,
fruit, nuts, spice, flour and baking soda dissolved in milk. Beat egg whites
until stiff and fold into mixture. Pour mix into a lined tin and leave to
stand overnight. Preheat oven to 160 C. Bake for 3 ½ – 4 hours.
