Ingredients
- 500g diced chicken
- 50g Butter
- 2 garlic cloves
- 1 onion, finely chopped
- 3/4 cup cream
- 4 tablespoons tomato paste
- 2 teaspoons sugar
- 1 1/2 tsps nutmeg
- 1 1/2 tsps turmeric
- 1 1/2 tsps ground cumin
- 1 tsp garam masala
- 1 1/2 tsps cornflour, mixed with cream
Yield: 4
Method
In a large fry pan sauté the onion and garlic in the butter until soft. Toss the spices (except garam masala) through the chicken then add to the fry pan. Add the tomato paste and garam masala. Stir in the cream and simmer till cooked.
* I often toss the spices through the chicken and then let them marinate for a few hours.
I love this- 100% tastes like mall butter chicken. I doubled the sauce and used half plain yogurt and half cream.
I live in Melbourne and there’s not one shop that makes ‘our’ foodcourt butter chicken. They’re all too spicy, not creamy and sweet….. this (your) recipe however, is absolutely delicious and just like how it tastes in NZ. MY whānau love it! Thank you for sharing.
I sell butter chicken here in melb and a lot of kiwis and islands buy off me cause it tastes like our butter chicken back home esp shamianas butter chicken.
This recipe does create a dish that looks 100% and taste 99% like the food court shamiana one. My family is very happy about being able to have this beloved sweet creamy curry at home anytime we like and enjoy it at only one fifth of the cost as in food court!

i tried this recipe – it is yum but i have 2 questions
1/ i was hoping it would be a copy of the butter chicken that Spice Traders in the Sylvia Park Foodcourt sell. does anyone have that one?
2/ this recipe is bright yellow and the Spice Trader one is bright orange – what makes it orange?????
food colour specially orange one makes it more bright.

My husband and I live in the US, but he’s a native of New Zealand and has missed this dish for the last 5 years! Butter Chicken (or Tikka Masala here) is so spicy, but we’ve missed that creamy sweet NZ version. We’ve tried everything to recreate it, but this is recipe is perfect! We’re dairy free, so I substitute the cream ingredients for Mimic Cream (Cashew and Almond cream sold in the US). This is also great in the slow cooker for especially busy days (I just combined everything and a few hours later, ta dah!). Thanks so much for this recipe!

I made this last night and it is the simplest, easiest and most delicious version I have ever made. My husband said it was better than the last Indian restaurant we went to. I can certainly recommend it to evferyone.

You can use soy cream and yoghurt instead of the cow’s cream for a lighter dish.
