Old Fashioned Gingerbread

  • 250g butter
  • 1 cup sugar
  • 4 eggs, separated
  • 1 cup milk
  • 1 cup treacle
  • 1 teaspoon ground ginger
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 cups flour
  • 1 teaspoon cocoa dissolved in 1 tablespoon boiling water


Preheat oven to 180 C
Beat butter and sugar until pale and creamy. Add egg yolks one at a time beating well after each addition. Add treacle and mix well and then add milk alternately with dry ingredients sifted together. Stir in cocoa and water and then fold through egg whites which have been beaten until stiff but not dry.
Pour into a greased meat dish and bake for 1 hour.
Butter to serve or ice with lemon icing.
