Wheatgerm Griddle Cakes

  • 1 1/2 cups wheatgerm
  • 2 1/4 cups milk
  • 3 eggs
  • 6 tablespoons salad oil or melted butter or melted margarine
  • 1 1/4 cups white flour
  • 4 teaspoons baking powder
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon mace


Mix all ingredients together well. Cook ladlefulls on hot frypan/grill. Can be topped with either sweet or savoury toppings/ fillings as per normal pancakes.
These are very filling and very tasty griddle cakes/ pancakes. Can be eaten as a meal in itself, I like to make them for a Sunday evening meal, or as a dessert. More substantial than your normal pancake and quick to chuck together. Wheatgerm is also very good for you!
