This salad has become one of my signature recipes, and is a study in contrasts. It’s always lovely to have the four main flavours — sweet, salty, sour and bitter — together in a dish. By adding honey to the walnuts you get the sensation of bitter and sweet at once. I also like to ensure that the salad has a few bitter greens as well as tender young sweet leaves. Duck breast served rare is the rule as it’s juicy, but do remember to rest the cooked duck for at least 10 minutes.
I loved the photo Elizabeth Clarkson took of this salad for the Listener o much that I put it on the back of my business card. When we were recently in Japan, the chef in a kaiseki  restaurant in Kyoto became so excited when he saw it that he added an extra course ofquickly seared duck to our menu. It was superb.

This is a big-flavoured twist on the beloved Kiwi bacon and egg pie. You won’t be able to stop at eating just one slice!

 Pastry
1 quantity of Butter Puff Pastry

Filling

1 tbsp cumin seeds

80g Cheddar
10 slices streaky bacon, rind removed
12 eggs
2 tsp curry powder
150g ricotta
¼ cup fresh flat-leaf parsley, finely chopped
¼ cup fresh basil, finely chopped
salt and freshly ground black pepper, to taste
150g sweet cherry tomatoes, halved

Glaze
1 egg beaten with 1 tbsp water, for egg wash

 

Grapefruit and Ginger Teacake

When I spoke with Gran about this recipe her face would just light up. She
loved this teacake; it is light and has a great flavour. Feel free to change it
by using lemon or lime — any citrus variety will work well here.

1 cup self-raising flour
½ cup sugar
60 g butter
2 eggs, lightly beaten
FILLING
½ cup grapefruit juice
1 tbsp freshly grated ginger
1 cup sugar
2 eggs, lightly beaten

Nici Wickes’ Spanish Slow Roasted Pork Shoulder Braised in Apple Cider Vinegar

SPANISH  PORK SHOULDER BRAISED IN APPLE CIDER VINEGAR

Wine match: Selaks Reserve Marlborough Sauvignon Blanc

This is the most divine way to prepare pork, with the apple cider vinegar cutting through and balancing out the fattiness of the pork beautifully.

 

YOU WILL NEED:

1.8 – 2kg pork shoulder, bone in
2 red capsicums, deseeded and sliced.
1 whole garlic bulb, broken into cloves
8 large tomatoes, halved (or 400g can whole tomatoes)
2 bay leaves
1 teaspoon paprika
1 teaspoon salt
1 cup apple cider vinegar
2 cups water

 

Banana Cakes. Little and Friday

This is our interpretation of the Edmonds Cookbook Banana Cake. We make it as a double-layer cake sandwiched together with gooey caramel and mascarpone.

 

2 cups flour
1 tsp baking powder
pinch of salt
125g unsalted butter, softened
¾ cup caster sugar
2 eggs
3 cups mashed banana
1 tsp baking soda
4 tbsp hot milk
1 cup walnuts

To assemble

½ cup Caramel
¼ cup mascarpone
1 recipe Cream Cheese Icing
chopped walnuts or banana chips, to decorate

 

 

Baked Lamb Chops

These baked chops drive me wild and, even as party food, they’re worth the
messiness — just provide guests with plenty of serviettes!

8 lamb cutlets, trimmed
(I use lamb racks)
1 x 3 cm piece ginger,
peeled and roughly
chopped
2 onions, chopped
4 cloves garlic, peeled
1 red chilli, deseeded and
roughly chopped
2 tsp garam masala
1 tsp ground cumin
1½ tsp cayenne pepper
1 tsp chilli powder
4 tbsp cooking oil
1 x 400 g can chopped
tomatoes
2 tbsp lemon juice
1 tsp sea salt, or to taste
1 cup natural, unsweetened
yoghurt
coriander leaves, to garnish

Fiesta Cake

Tres leche cake, or three milk cake, is the cake to beat all cakes! It demands
a party and perhaps that’s why it is one of the most popular desserts for
birthday and wedding celebrations in Mexico. This is my version, complete
with a fresh fruit filling.

You will need:
6 eggs, separated
¾ cup caster sugar
1½ cups plain flour
1½ tsp baking powder
2 tbsp rice bran oil
½ cup milk (optional)
1 x 395 g can sweetened
condensed milk
1 cup evaporated milk
½ cup whole milk
1 tbsp vanilla extract
2 tbsp rum (optional)
300 ml fresh cream,
whipped
1 cup cut fresh fruit (I like
strawberries or mango)
¼ cup chopped almonds
(optional)
sprinkles, for decoration
Frosting
75 g butter, softened
2 cups icing sugar
1 tsp vanilla extract
2 tbsp milk

Spicy Baked Yoghurt Chicken Drumsticks

One of my favourite ways to serve a meal is as a platter of deliciousness, wherewe all sit around and build our own little snacks, adding as much chilli or cooling yoghurt as we like. These drumsticks are wickedly spicy and so, so good.

to the base or to the icing will make it a bit different. Make sure you don’t
cook it too long, as it will dry out quickly.
