Flourless chocolate cake

Ingredients

  • 225g dark chocolate, broken into pieces
  • 225g unsalted butter, softened
  • 1 cup caster sugar
  • 6 medium eggs, separated
  • 225g ground almonds

 

 

 

 

Method

Preheat oven to 150 C Grease and line a 20cm spring form cake tin. Place chocolate in a food processor and process until coarsley ground, mix with almonds and set aside. Cream butter and sugar together in an electric mixer until pale and light. Add the egg yolks one at a time and then the ground nuts and chocolate. Beat the egg whites separately until soft peaks form. Fold about 1/4 of egg whites into the chocolate mixture to loosen and then fold in the remaining egg whites. Pour into prepared tin and bake for 45 minutes until set, test by inserting a skewer.

  1. Just made this cake! It is delicious! – the supermaket had no unsalted butter, so had to use salted…prob made it even richer!! (very rich cake). We also currently don’t have a blender so we melted the chocolate in a saucepan over boiling water in another saucepan….seemed to work ok, but would be interesting to see if there was a different texture if we had a blender and followed the recipe :). The ground almonds gave it a nice difference too! Very impressed with how it turned out :D. Will try some again tomorrow when its cold. This would go perect with some fresh summer fruits or yogurt? to cut out the really rich taste! Also you could even do half the recipe….it makes a heap load for just the two of us…it also rose quite a bit. AWESOME RECIPE. FIVE STARS!!!!

  2. This looks a divine recipe. I have a very similar one that I have used a few times. The butter and chocolate are melted together though. I was wondering if it would make any difference if I took our some of the flower and replaced the quantity taken with a good quality dutched cocoa to make it even richer tasting?

  3. I have this recipe in a “Summer Entertaining” recipe book. It’s so helpful if baking for guests on wheat-free diet. Lovely texture and very chocolatey.
