Ingredients
- 185g flour
- 5 teaspoons caster sugar
- 100g unsalted butter, chilled and diced
- 1 egg, beaten
- Filling and topping
- 150ml golden syrup
- 90g unsalted butter
- 225g dark chocolate, chopped
- 3 large eggs, lightly beaten
Method
Sift the flour into the bowl of a food processor, add sugar and butter and process until the mixture resembles fine breadcrumbs, about 30 seconds. Add egg and quickly mix to
form a smooth dough. Shape into a disc on a lightly floured surface, wrap
in plastic wrap and chill for 20 minutes. Roll out pastry and line a 23cm
round pie dish. Trim and edges and chill for 30 minutes. Preheat oven to
180 C Place the golden syrup, butter and 175g chocolate into a saucepan
and melt over a gentle heat. Remove from heat, add eggs and beat well. Pour
mixture into chilled pastry case. Bake for 30-35 minutes or until filling
has set, leave to cool completely.
