- 175g butter
- 1 cup brown sugar
- 1 egg
- 1 3/4 cups gluten free baking mix
- 1/4 cup cocoa powder
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 3/4 cup dark chocolate bits or chips
Preheat the oven to 180 C.
Beat butter and sugar until pale and creamy, add the egg and mix well.
Mix in baking mix, baking powder, soda and cocoa and then lastly mix in the chocolate.
Place spoonfuls on a baking paper lined tray and bake for 12-15 minutes until well coloured and firm.
Cool on a wire rack and store in an airtight container.
