Gluten Free Chocolate Brownie

This brownie is crisp on the outside and fudgy inside.  It is rich and delicious and can be made with plain wheat flour instead of baking mix.



  • 225g dark chocolate
  • 50g butter, melted
  • 2 eggs
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup ground almonds
  • 1/2 cup gluten free baking mix


Preheat the oven to 170 C.
Break the chocolate into small pieces and then place in a bowl with the butter and gently melt over a saucepan of barely simmering water or alternatively melt in the microwave on medium heat, stirring regularly.
Beat the eggs and sugar together until pale and creamy and then add ground almonds, baking mix and finally the chocolate. Mix until smooth.
Spoon the batter into a lined 30 x 18cm slice tin and bake for 20 minutes or until the brownie is well coloured and feels firm.
Allow to cool and then dust with icing sugar and cut into fingers.
