2 tablespoons golden syrup
2 tablespoons butter
2 cups flour
1/2 teaspoon salt
2 teaspoons baking powder
1/4 cup sugar
2 eggs
1 1/2 cups milk
Melt together golden syrup and butter and then set aside.
Sift flour, salt and baking powder into a large bowl. Mix in sugar and make a well in the centre.
Whisk eggs and mix in milk. Pour the liquid into the dry ingredients and whisk until smooth.
Stir through the golden syrup and butter.
Heat a large frying pan and grease with butter. Place large spoonfuls of batter into the pan and allow bubbles to break on the surface before flipping to cook the other side.
Pikelets are best served fresh or better still – warm.
