Ingredients
- 1 iceberg lettuce
- oil
- 2 cloves garlic crushed or 1 teaspoon crushed garlic
- 2 teaspoons grated ginger or 1 teaspoon crushed ginger
- 2 chillies diced and seeded or 1 teaspoon crushed chilli
- 1 kg pork mince
- soy sauce
- 4 spring onions chopped
- coriander or parsley
- chilli sauce to taste
Method
Peel whole leaves off an iceberg lettuce, wash well and chill until needed. Heat a large heavy based frypan or wok until hot, add a drizzle of oil, garlic, ginger and chilli and cook for 1 minute. Add pork and cook until it browns. Add soy sauce to taste, spring onions and coriander or parsley. Spoon into lettuce cups add a dollop of chilli sauce, roll up and serve immediately. Serve with steamed rice if desired.
